Impress your guests and elevate your holiday meals with this rich and delectable arugula salad featuring charred tomatoes and stracciatella.

Recipe Ingredients

  • 1/2 Red onion
  • 10 Charred tomatoes
  • 100g Arugula
  • 200g Stracciatella
  • 2 tbsp Balsamic glaze
  • 4 tsp Olive oil
  • 1 tsp Wine vinegar
  • 20g Pine nuts
  • 2 tbsp Lemon juice
  • Salt and black pepper

Dressing Preparation

Whisk together olive oil, lemon juice, wine vinegar, salt, and pepper to taste in a small bowl.

Salad Assembly

  • Place pre-washed baby arugula on a large flat plate.
  • Halve tomatoes and thinly slice half a red onion.
  • Arrange charred tomatoes and red onion on arugula.
  • Drizzle with dressing and spoon stracciatella over tomatoes.
  • Sprinkle with pine nuts and finish with a drizzle of balsamic glaze.


  • Substitute pine nuts with pumpkin seeds.
  • Replace stracciatella cheese with burrata.
  • Mix arugula with spinach for added greens.
  • Add thinly sliced pears or mangoes for a touch of sweetness.
